Hello from a newbie....

I would like to have synced the Safari bookmarked favourites between Mac and iPod but NOT with iCloud.
It can be done?

Maybe through iTunes, but it would require some research. What's wrong with iCloud?
XMarks is a Firefox synch extension, but you'd have to consider using Firefox on your ios devices, and I don't know if Xmarks has a ios verion.

One example: Is backing up the iPhone to iCloud.
Do you mean backing up the iPhone installed data so it can be restored to the iPhone if needed? If yes, then I thought there was a selection on where you could backup your iPhone to iCloud or your Mac.

You also do not have to turn on iCloud login on the iPhone if you do not want the iPhone to have access to iCloud. If you do connect the iPhone to iCloud then what gets synced can be selected.

I must still be missing something.

It is about syncing an Mac with iPad, but doesn't matter.
When I sign in from iPad (not possible to start the sync without signing in to iCloud), this start to sync immediately almost everything even before I go to the settings to choose Safari only...

I cannot confirm this. Some people like it complicated, it seems.
