Synching only one thing and not everything?

I just rearranged some app icons in iTunes and I'm synching it via WiFi. I do not want it to do a complete backup and retransfer everything back to my 4S, I just want it to only synch the rearrangement of my app on the screens.

Is it possible to do just that?

Yep, just hit apply.

There is no Apply button for me, just a Synch button that goes through everything.
