A long time ago I set up iTunes to sync a few smart playlists--and only those playlists--to my iPhone (5s).
After I started using Apple Music and iTunes Match, I decided to replace these playlists with new ones and can no longer set up my playlists to sync as I remembered doing it last (which originally happened on an iPhone 4s).
All I have access to is a sidebar where I can view, under "Devices" the "Music" on my iPhone. But the music appears as one big list, and the only option to change what's in it appears to be through "Edit Playlist" which would imply, to me, that there is only one playlist on the phone and its contents can only be edited song by song.
I suspect there is some quirky setting I have switched the wrong way, or a tab in plain site I have failed to click, or some problem with doing this and iTunes Match and/or Apple Music.
Can anyone point me in the right (yes, probably repeated many times in other places) direction?

Help--I know this is really stupid and I'm basically revealing I don't know how to use my own iPhone but this is a problem: music has been added onto my phone since I've started with Apple Music and the phone's iTunes library is growing too large! (I've had to delete stuff to avoid dealing with this problem for a while)
