I have a jailbroken 2G iPhone and just got a 3G that is jailbroken. I will use the 3G on a normal basis but I may want to use my 2G in situations where it may get beat up some or there is a higher chance of me losing it (plane trips and hotels). Will all my Cydia apps and settings sync up the same as my most current 3G sync with iTunes when I connect it, or will I have to redownload the apps within Cydia on the 2G to keep it up to date?

The jailbroken apps from 2G will not sync up with the jailbroken apps in the 3G. That's a quirk of jailbreaking, since it isn't supported, apps don't have iTunes to back their settings to.
