I have a standing desk too and it took me a long time to find an iPad stand that doesn't wobble like crazy especially when my desk is raised.
My current set up is something that I cobbled together with a VESA arm and a magnetic folio case. Basically, I cut off the cover part of the case, drilled four holes into it and attached it to the VESA arm. It is mostly adjustable, except for height which requires loosening a screw to adjust, but it also attaches magnetically. I glued two plastic L shaped support brackets at the bottom which makes it a lot easier to mount or remove the iPad Pro one handled.
It wobbles significantly less than every single tablet arms that I've tried and I tried a lot of them.
Check out Twelve South's new duo stand. It was just posted today on the main page. Seems to get pretty tall, is adjustable, and although it's pricey, it should be great quality coming from TS.
On the website page it says the fully extended arm length is 15 inches. So you might do some measuring while standing at your desk to see if 15 inches would get the iPad where you want it.

Yes - at first I found it hard to put it in because it does grip it very tightly, but now it is super easy and second nature to pop it in. I love how sturdy it is, it is a super solid piece of kit with no worries that it would ever tip over. It is awesome being able to move it from portrait to landscape and even to face the opposite direction so when I’m in the kitchen I can 180 it to have access to the iPad when I’m moving around and when I sit back down I can face it the other way - after COVID this 180 ability will be awesome in meetings being able to show a guest something on the screen.
I love how high it gets as well - I forgot how much I was slouching to use the Magic Keyboard until I started feeling better (with my back) not using it for a few days.
