I've done this on iOS 10 and it works perfectly.

To save space, you could TRY not including the Attachments folder, which is likely taking up most of the 30GB.

I recommend making a duplicate of the backup before mucking around at all.

How were you able to edit the backup folder under iOS 10? I have not been able to at all. No apps will read it.
 
I'll check at home. I went from 8.4 - 10.1.1 which would have involved accessing the 10.1.1 backup and it was ok.
Very interesting. Yeah I have two 10.3.2 backups, both unencrypted and it won't find them. It gives me an error. But it read the 9.3.3 right away.
 
Backing up a 10.3.1 iPad Air now to check. - Seems ok

This is 10.3.2. I cropped the image because it had my UDID number, but other than that, it won't load.

After I get that message, iBackupBot crashes.

"iBackupBot quit unexpectedly, would you like to reopen?" or whatever the exact verbiage is.
