Don't think I've seen anything else about this, so hopefully not starting new thread that's already going. Apple watch has "canned" responses for texts like OK, Thank You, etc. my husband stopped in market and was getting bread, he sent me a text from his iPhone that said simply, "sourdough or white". On my watch there were responses that popped up to respond with one saying sourdough and the next one saying white......I thought that was so cool!! I picked one and it sent it back to him.

This feature also exists on the iPhone, it pops up above the keyboard and was introduced in iOS8. It makes you realise how Apple had this all planned out really!

I think it is very cool however I never really find myself using it to be honest. Maybe will be different when I actually get my Watch (if I ever do).
 
I agree that this feature is handy. My husband figured it out and has started texting me choices to make it easier for me to respond in meetings. I also noticed today that when I was sent a yes/no question, those were included in the responses.

You can also change the canned responses. I changed some of mine to ones I tend to use often.
