I don't understand why, when I click on the TextEdit icon in the dock, instead of giving me an open doc to start using, I have to click on New Document. Really annoying, especially when I'm on the phone and need to take a quick note.

I'm on an old Snow Leopard machine right now and I don't have a way to check a current machine (it works the way you want in SL).

However, you could create a new, blank document, give it a name like "New TextEdit", do a "Get Info" on it, check the "Stationery Pad" box, and put that document into the Dock. A new blank document will open in TextEdit when you click it.
