I wonder how well Time Machine will work for laptops though, since those only have 1 hard drive.
That is something I wonder about, too... Probably kicks in once you connect it to an external disk.

I'm considering getting some sort of NAS running and let Time Machine use a network disk to do it's thing at midnight whenever I'm home...

You can use it with a single internal disk, but naturally if your hard drive bites it, Time Machine won't be able to save you. I also wouldn't use Time Machine as a backup solution in and of itself, since it's not system-wide.
