I really don't think I'm nitpicky either. I just don't want to pay almost $800 for a display that is noticeably yellow.
Give it 20 minutes and you'll prefer the yellow, I was a hard core cool blue fan and hated the idea of a warmer screen on anything from my iPhone to my TV but now after using it I actually really enjoy it. Colors seem to pop a bit more to me and have a more accurate look when taking pictures.

I remember using the S7 Edge one night in basic mode next to my 6s and I thought the AMOLED display was way too yellow. Then I realized that it was actually displaying more of a true white than my iPhone was. My iPhone's display was blue! Same thing I noticed today comparing my 6s to the 7 Plus display. I really prefer the warmer, more truer white tone.
 
I have only seen the yellow screens in pics online. Not saying it's not an issue...but people will complain online more than they won't. I've seen 4 different 7 pluses and 5 different 7s and none of them had an issue. Go for it. If something is wrong apple will make it right.
