I have bought 16 Macbook Pro from the apple store. What are things I should check to see if everything is working properlly.

It is the same warranty and return policy as buying new. It should look brand new. I have purchased a few refurbs in my day and it was always a great experience. They even come in the new box now where that was the only difference in the past, was it came in a brown box.

I just checked that it looked brand new, no blemish and then used it. Run it through some common benchmarks to ease your mind :)

Check all the same things you'd check on any new computer.

I've bought various items from the Apple refurb store and have never discerned any difference from brand new except the box the item was in.

Check for physical defects, stability and battery performance.

If battery health is below 100% then:

Discharge completely
Leave discharged for an hour
Charge to 100% without using it
Leave charging for at least a few hours after hitting 100% charge
Use normally

I had a refurb arrive with 89% battery health and doing the above made it hit 99%
