Think the 8GB iMac 2012 is enough?

Go semi-pro....like "Microsoft Paint" or "Microsoft Word 95"....u should be good running "pro msdos"....
 
The baseline iMac 21.5" with the 8GB of memory will run FCP X and photoshop with no problem.
