Up until now software update would just run, and I would just click on Install/Install and Restart etc, and my system would update itself.
This time however, it ran, I clicked on Install and it asked me for my admin password, that's still fine, right?
 
It's always asked me for my password, I'm not sure why you've experienced it not.

Regardless, nothing is wrong, this is normal behavior.
 
It depends on what is updated. If it is something related to the core OS, like updating from 10.6.6 to 10.6.7, then it should prompt you for your admin password, but if it was something like an update for iPhoto or iTunes then I don't think it would prompt you.
