Is there any way to make the thumbnails bigger when I open a file? Is there any way to get the same options (list, details, large, med, small) that I had on my pc?

In which application, as you talk about opening a file, it seems you mean something other than Finder?

In finder when I open my photos or when I am uploading to a site and I need to select photos to upload. I did figure out how to put it into list mode.

Press CMD+1 to change to Icon view in Finder windows or OPEN/SAVE dialogs (if they allow it).
If that is what you want.
