I've a spare TC 1TB
Was going to use it to back up my primary TC.

However, I get prompt: Enter your password for the server " Time Capsule 8868e8" so that Time Machine can access it
I've no idea what password is! Any ideas?

Do you remember the password that you used when you set-up your TC, if not, you will need to reset the TC per the instructions that are available on Apple.com?

Question; I have Mac Mini(late 2012) OS X "Mountain Lion" and also a Mac Mini(Late 2014) OS X "Yosemite", so, in order to use "Time Machine" for backing-up both devices on my Apple Time Capsule(TC) must I partition the TC because of the two(2) different OS Systems?

Nope... each backup will reside inside its own sparse bundle file. See this.
