I've noticed the time lapse faces for various cities don't appear to match time of day; for instance right now Paris indicates as daytime at after 1 AM in Paris. On the other hand, (no pun intended) NYC shows sunset/dusk/night sequence, which would appear appropriate.

Do any of you know how these are supposed to work?

I noticed the same thing. The day WatchOS2 first came out, I saw that Paris was showing daytime at around 12AM for me (EST). Now when I use Paris, the sun sets at around 9PM.

At first I thought it was going by Paris' local time, but that wouldn't be right because the sun sets at around 7:30 there. Then I thought it was going by my time, but that would also be wrong because the sun sets for me at around 7:15. New York does seem to be the only one that accurately represents the time of day as well.
