Whenever my time machine backup starts I get a message Backing Up Encrypted disk to Unencrypted Disk. I don't know what that is about as I have never encrypted anything.

Your laptop disk (SSD) is encrypted by default, and it's telling you that you're losing that security as your backup is not encrypted.

I'd recommend encrypting the backup but of course that's up to you!

I just got that message, for the first time, after I upgraded my 2020 iMac to Sonoma. I created and formatted the backup disk with the iMac, and never saw anything about it needing to be encrypted?

Just got off the phone with Apple Support. They agreed with above its because the T2 chip encripts SSDs and said it would be fixed in a future update?
