just wondering if there's something out there that acts like Time Machine - where it'll back it up, but will simply update it after the first back-up? It doesn't have to be automatic either, I can manually do it.

Winclone would take too long to constantly back it up. Thanks.

Acronis TrueImage does incremental backups. It costs about $30, but it is well worth it. I have purchased multiple copies.

The built-in backup application in Windows Home Server does incredibly small backups on a daily basis; however, it requires you to run Windows Home Server on another machine.

If you are running Windows Vista, the backup utility will backup like you have asked. Also, it has something called "Shadow Copy," which allows you to restore previous versions of files. This has been around in Windows for years, but it used to only be available on servers.
