I notice that when I use the timer app it only stays on if I don't, for instance, want to see my watch face. If I do, the timer simply reverts to the home screen, thus cutting the time I'd entered short. What am I doing wrong...?
 
When I activate the timer it goes back to my main screen after a while, but the timer stays active. I can change faces, check different apps, etc, and when I check the timer again it’s still counting down.

it seems to have failed a couple of times when I’ve used a preset (if memory serves, and it might not), but I don’t use the presets anymore anyway, I just use Siri, tell it what to set for, and it keeps counting down no matter what other things are going on.

Try not using presets, see if that helps.
 
I use Timer constantly. Yes, the timer keeps running when the display switches back to the watch face (or I switch to another app). Since I use timer so much, I have a Timer complication. The complication shows the time remaining, which confirms the timer is running.

I don’t think it’s a separate app, the complication that comes with the watch does that. It’s the one I use and you can see it running even when closed.
 
I tried hologram's solution: not to use the pre-set timings, but customize the time, in which case it doesn't vanish.
