I have an unlocked iPhone 3G on T-Mobile, and whenever I receive a picture from someone it is terrible quality. I am beginning to think that it is because I am on EDGE, and the iPhone automatically resizes them to compensate for low bandwidth. Is there any way to trick my phone into thinking it is on 3G, when it is only on EDGE?

It's the sending phone that decides the quality not your iPhone. I take it you are tapping the image to enlarge it?

Messages automatically stretches the images so that they fill the entire screen, the only reason I found out they were tiny was I connected my phone to my windows PC.

And as for the sending phone controlling the quality bit, it happens with pictures sent from everyone :\
