So what cable(s) would I have to get to connect both my 27" and 24"? so many different things have been said .. :D

I've currently got my Air hooked up to a DP->miniDP lead into my Dell 24". I also have a 22" Dell monitor (currently only being used as a secondary into Windows PCs through VGA :eek:), that if I get a rMBP will be using the above lead and a DVI->miniDP lead. My 22" only has DVI and VGA - it's getting a little old now (2209WA, but still working great).
Amazon in the UK has the DVI->miniDP leads from around £2 upwards.
 
check out the henge docks - they look pretty neat for an easy way to connect everything up and use a larger monitor etc...

For your Dell 27" I would utilize the Displayport on the monitor. You'll need a normal Displayport to Mini Displayport. I use these with my larger Dell screens. There are longer versions if needed, but the Accell cables have been great. Some others with good reviews as well.

If your "generic" 24" screen doesn't support Displayport as well, you'll need a Displayport to DVI adapter and then just use DVI. You can get the Apple adapter or there are a few "off brands" that offer them as well a bit cheaper. I use go for the Apple adapters myself when needed. Less hassle usually.
