Although TomTom seem to be selling their own 'in-car holder' for the iPhone which seems to have a speaker etc. Does anyone know if voice can be used from the iPhone via an in-car bluetooth connection - would make sense!

should be possible, I have iDA (Sygic) GPS on my jailbroken iphone with an FM tuner and it works great, the gps speech is loud and clear coming out of my carspeakers.

should work with bluetooth or the aux input also.

although I don't see why anyone would buy the tomtom carmount, it looks sh*t, the DLO Vent Mount looks is much better.

what i don't get is that if the tom tom car kit allows you to play itunes through your car's speakers, why does it need a built in speaker for voice directions?

It's an audio out connection\cable which may or may not be able to plug into your car stereo. If not, then if there was no built in speaker you wouldn't be able to hear the voice directions 🙂
