No, I just traded in my Series 3 Aluminum and got $175 for it. I was actually surprised I got that much. I was also able to keep the charger and band. Very good deal if you ask me.

I called Apple hoping if I took my trade watch to an Apple Store they would evaluate it and give me credit, but they said it gets sent to contract trade evaluator.

Sure hope you actually received your credit after watch sent to Brightstar. They are not to be trusted. Do NOT use Apple's giveback program as long as they are using Brightstar.

I didn’t use Brightstar. I had a great experience. I walked into my local Apple store and did it on the spot. I got $175 Apple credit which I put towards my 44mm SBSS.

Like I said, I was also able to keep my band and charger. Very happy about that.
 
A few days ago I pre-ordered an Apple Watch Series 4 online and it has a shipping date of mid october. During the order, I also setup a Giveback trade-in for my S3 Watch that will be a refund towards my new S4.

I am off in the morning and actually have some free time so I am thinking about going to the nearby Apple Store to see if I can get a Series 4 in store instead. If I end up getting one, can I do a GiveBack trade right then and there or does it have to be done online? Ideally I want my trade in amount going towards my new Watch

Alternatively, if I trade in my watch online and get a gift card. Then once I get the gift card, could I go into the store, and have them return my watch and then let me repurchase it with the gift card or something?

Actually that is Brightstar with Apple as the agent and you just avoided sending it to them.
