Every year I buy new iPhone and never use backup or migrate files, I setup new iPhone as new

this is the first year I need to transfer eSIM from prevoous model, is it possible to do that only for eSIM, not ti migrate everything?

Yes.
All you have to do, is go to Settings/Mobile Data, and scroll down to Add eSIM, there is an option to transfer from Nearby iPhone. Obviously you will have to boot up the new phone, and done some preliminary setup.
