So here's my situation:

I have a personal iPhone 15, with a physical SIM and my own iPhone data (including banking apps and identity apps and such). I have my own apple account on it.

I have been provided with a work iPhone 17 Pro with an eSIM that has email and IM and most importantly 2FA for logging into my laptop. I have my work apple account on it.

My problem is I don't want to carry 2 phones.

I suppose you know where I'm going with this, but let me explain it out. I would like to transfer all my data and number to the work iPhone. But, if I don't feel comfortable carrying my work around, I'd like to switch back.

1. Without having to delete anything on my work phone, can I transfer all my data from my apple account/iPhone to the work phone?
2. Would I be able to transfer my personal number from the eSIM back to the physical SIM on my iPhone 15 in case I change my mind?
 
In my opinion, what you are wanting to do is not a good idea. Depending on the MDM setup of the work phone, anything transferred to and accessed on the work phone can become property of your employer. And with the MDM, the employer can have access at any time to any and all data on the work phone. As such, putting personal information on the work phone is a very bad idea.

I also would not put personal data on a work-issued phone (or laptop). Most employers probably won't steal your data or access your bank accounts, but they could remote wipe the phone and suddenly all your personal data/apps/messages are gone. They also could - and probably will - monitor and log everything that you do on the phone, including copies of text message conversations and call logs.

the two goals you list: doable.
the comments by others about mixing work and personal are merely individual preferences.

but. be careful of what you wish for.
i am not aware you can have more than one Apple Account ID in use concurrently on the same device.
if this is correct, then you will be faced with tradeoffs throughout the OS affecting overall usability.
i think you will have unintended drawbacks to this setup, albeit meeting your two limited objectives.
 
When it comes down to it, you can have your stuff on two phones. So I think you can do what you want to do. As far as what the phones look like, what you’re comfortable doing, that’s totally up to you.
