I have an Iphone 4 and getting an Iphone 6, but I don't want any of my data to transfer across phones, except my contacts (and some apps and their data).

Is this possible? How would it work? I don't want any of my texts on my new phone.

BUT, could I look at my old phone whenever I wanted to to access old texts?

Yep, just don't select the restore option and setup as a new device when you turn on the iPhone6.

Regarding your contacts, I hope it is up on the internet somewhere like Apple, Google, Yahoo, Exchange, etc. If it is local, I don't think there is a way to extract those contacts. Try syncing them to the Apple iCloud so 1, you have a backup copy, 2 so you can easily transfer them to your new iPhone (with or without a full restore)
