iPad Transferring data from old iPad to new?

I'll probably be upgrading to the new iPad 5 from my old iPad 3.

Stupid question, but is it possible to sync/backup data from the old iPad 3 to iTunes, then re-sync it to the new iPad 5?

There's this program called iTunes that backs up your iPad/iPhone and restores it to a new iPad/iPhone.
