I know this is unlikely, but is there any customizable slider or setting for adjusting the transparency levels of Finder windows and other apps in Yosemite?

You could always submit a bug report requesting such a feature. The more people request something like that, the more likely Apple is to at least consider adding it.

The Yosemite launch video shows a much lighter transparency. I wished things are little more transparent.

They were also showing a different build/branch of Yosemite than what the devs got last week.

Yup. Even the Finder icon is different.
