Is there a way, that the trash bin and the junk mail bin in mail.app indicates "empty" and "full" by it's icons similar to the desktop trash bin ?
 
No, but you should see by the side of those folders the total number of in them. You don't really need a different icon, since it's obvious there's something in them.

Unfortunately it is not "obvious there's something in them", which is the exact reason, why I ask for a representation in the icon.

So in Snow Leopard we can also not change mailbox icons like in Leopard, to visually mark different boxes?

Yes, there is no way to tell if your "Mail Trash" folder is full or not (besides actually checking).

There might be ways, but I think they'd involve command line.
