can you make some good travel videos just using an iPhone X 64gb, IPad Pro 10.5 64gb and MacBook Pro 512gb? What apps would be recommended for beginners if so? Are there any good examples out there of travel videos made solely using Apple devices?

You can do both, but you can do more on your Mac.

just search on youtube for ”travel video iphone x” and you will find many good tutorials on how to think and record a good travel video. iMovie will be perfect for the beginner on the MBP. It is what you record that makes the story not the software.
