I’m planning to take my unlocked iPhone 7 to Thailand and India next month and buy local SIM cards in each country. If somebody in the US tries to call me will they get a message that my phone has been disconnected? I’m hoping that calls will go to voice mail and I can check them online.

They'll go to voicemail. Unless you completely cancel your plan with your US carrier

Use WhatsApp! You'll keep your same number and you'll be able to video and audio call back.
