Trouble backing up iPad Air 2

Using latest Sierra / iOS / iTunes

Backing up to computer using cable

It starts backing up fine - creating the backup folder in the Library/Apple Support / Mobilesync/Backup

It gets to stage 28Th ( as shown in iTunes progress bar ) then hangs with this message: ( see pic )

The backup folder it has created always reaches 2.67gb in size.

What can I do?

I feel I can't simply go reset my iPad - as I now have no backup file to restore from!
