Here's the problem. I added the birthday field to the edit window, and I can adjust the month and day of the birthday, but the year remains at "07" and when I close out of the edit window, the birthday's correct month and day are displayed, but the year reverts to 2000.

How do I just the contact's birthday year?
 
you need to put in their birthday in the appropriate format.
look at your preferences for exactly how it should be inputed..
 
I poked around in the Preferences and all the drop down menus. No luck. The same problem happens with the "Date" field as well.
 
That's the problem. It just says "07" but I can't highlight it by mouse or tab to it to change the year.
 
Strange. 😕 I just checked: I can do that.

In you situation, I'd quit Address Book and erase this file:

~/Library/Preferences/com.apple.AddressBook.plist

and restart the programm. If it does not help, reinstall the programm.
