When ever I connect my phone to my Mac to do any updates - Music, photos etc - I'm always asked if I want to trust this device. I thought that once you trust a device once, it will be saved for future use so you don't have to trust every time. Is this correct?

seems to me that is getting annoying just as signing in 3 time to purchase an album off iTunes.
although we can disable that,

I guess being asked every time, which is what apple wants.
most people keep these devices to ourselves as I do
and won't plug someone else's device onto our MacBooks iMac, etc.
if there is a way that makes life easier for you I would select that option.

So as I'm always plugging my iPhone into my own mac, surely the normal thing to do is to trust this device once and to then not be asked this question again for a while? But I get asked everytime I want to sync music or upload photos from phone to mac.
Yes, this is normal. Every now and then I'll get the prompt again, I am assuming it has to do with time or OS/app updates, but most of the time my phone just shows up in Finder.
The behaviour was changed to always ask about trusting before initiating backups as a security measure ( basically if someone didn't know your iPhone passcode, but did know your Mac's password they could plug your iPhone into the Mac, make a backup and then access that backup. Or if they copied the trust key off your Mac they could use that on their Mac to copy the data off your phone via backup). If you have automatically sync/backup on connect set you'll get this every time

I don't get asked for the code in Finder only when syncing to the Music app. So going by JonaM's reply, it seems this is normal.
