Since I use Overcast, I deleted Apple's Podcast app since I never used it. But with the release of Watch OS 5 I want to add the app to my watch so I reinstall it on my iPhone and it won't install properly on the watch. I see the Podcast app icon but it's darkened out with what looks like a progress meter. (as if installing)

Tried deleting and reinstalling on the phone and nada...

Reboot your iPhone and it should solve it. Appears to be an iOS 12 bug.

Meh. Discovered the latest update for Overcast on Watch OS 5 also includes offline playback. Deleted Podcasts again.

I have the same issue. I use Overcast and I like it, but I'd like to try the Podcast's new version. Any lucky?

Nope. And since I just needed watch support for podcasts and it also works on Overcast, I don't need it. But perhaps the watch 5.0.1 update fixed it for you?
 
I had the same issue. Erase all content from your watch - keep cell plan if you have one (that's an option). Re-pair and restore from your back-up. Podcast app will load properly. It's not a short process as all data will need to be transferred back on your watch - i.e., my 600+ songs are still downloading. Hope this helps.
