I've done research on this but no one has given an actually way to turn off the iSight light. What I am basically trying to do is have the "green" light off for the iSight so that I can remotely access my MacBook Pro and turn on the iSight without someone noticing. Is this possible and how?

You can't, it's hard wired to the camera, when the camera is on, so is the light.

You'd need to take apart the whole display and cut out the power wire to the light.

I can do that, but it seems like to much work so instead I'll eat ice cream and call it a day.

This. There's also the option of having post-it notes on the sides of your screen, keyboard, and one right over the light; if she doesn't notice she's probably "good."
