that is precisely what I would like to do but I haven't been able to find that anywhere in the interfaceHave you considered turning off using the Plex web access for your server set up?
I take it you want to make sure others can't remotely access the server? If so...

If I remember correctly, ( I use a NAS now with Plex) there is no way to do that in the Mac app. What I always did was just turn off the screen when I wasn't using the Mac. In this day and age, there really is no real need to put a Mac to sleep, in my opinion.no actually
what I want to do is quit the services so that the machine can sleep
that does not do it as all the services remaining running, preventing the machine from sleeping

Just quit the app and the server will stop running.
