Turning an image into text?

Well I just took a scan of a holiday break assignment and I wanted to know if there is any app that could take the jpg files the scan created and turn them into text?

It is a webapp where you upload your picture - it then creates the picture by using only text characters.

You need OCR software. Your scanner may have come with some OCR software or you can buy a better type. Check http://www.versiontracker.com or http://www.apple.com/downloads/macosx/

Unless someone else can recommend one in particular.
