guys - on my iPhone I've turned off handoff and on the Mac in general settings, I've unchecked Allow handoff between this Mac and your iCloud devices. On phone calls, when I click speaker button, it still shows my Mac mini as an option. How do I get rid of this. I like just a single click to go to speaker and this is interfering

Have you tried restarting your phone after turning off the setting to see if the Mac mini option is gone?

Oh one other setting to check on your phone is under Settings-Cellular.

Check under "Calls on Other Devices" and make sure Mac mini is unchecked there as well.

That was it and in fact the only setting you need unchecked - thanks!
