You can use a splitter, but they will still be considered one display by OS X and will mirror the same information on each.
If you actually want two independent displays you will need to do one via HDMI and the other via Mini-DisplayPort. You can buy third-party MDP->HDMI adapters so you can hook it all up with HDMI cables.
A splitter like this will allow you to mirror two displays. They'll both have to support the same resolution though, you'll just get the same display on both screens.
Get an adapter like this to use the MDP on your mini to connect to a second display. This would allow you to run the second display at a different resolution with a different image displayed, or to run it as a mirror of the first display.
The second option would be cheaper and more versitile. Unless you need the MDP to drive yet a third display then I would go with the adapter.
