I don't need these umlauts and stuff that come up when I hold down a vowel on the keyboard. Is there any way to turn this feature off? :/

In terminal type (or copy and paste):
defaults write -g ApplePressAndHoldEnabled -bool false

to re-enable:

defaults write -g ApplePressAndHoldEnabled -bool true

or if you don't know or feel comfortable with the command line then you can download Lion Tweaks (free).
