Yes, you can just plug the phone in and hit restore.

I do not believe so, as you will be loading it with the official firmware.

does upgrading to firmware 2.1 erase the custom boot logos?
i may need to take my phone to the apple store and i haven't upgraded yet so i figure i can just do that if it will hide the jailbreak, and if they dont replace my phone i can just rejailbreak with quickpwn
