When I connect my iPad to my Win10 PC, it shows up as an external drive and I can copy pictures over; but I have an 8GB video, and when I try and copy that I just get an error saying the device has stopped working, then none of the iPad files are openable on the PC until I unplug it and plug it back in...

Any idea how I can get this video file to copy over?
 
You can use a file manager app like FileBrowser or FileExplorer that has access to Photos and copy over an SMB connection. Or use iTunes on the PC. I use FileBrowser for Business for these kind of copies.
 
Yeah, there doesnt seem to be a way to transfer just one file using the iTunes method.

I hate stuff like this, it should be so simple, but stuff just doesn't "work"... :-(

Yep. I don't use iTunes for this kind of transfer, I use FileBrowser. I only use iTunes for loading music into the Music app - the only route feasible as Music is not visible in Files or file manager apps.
 
What if you store the video as a file on the File system (like cloud service)? Would this work or the file is too big for this to be an option. I myself have not tried this.
 
I just thought, I could just log into icloud.com on the PC and download the file from there.. I am now trying this, it's doing it... slowly...
