There's probably a way to do it through iFile.

Just hide it using a tweak.

Step 1: Install iFile from Cydia.
Step 2: Go to / (the first directory where you cannot go any farther deep into the filesystem.
Step 3: Go to /Applications.
Step 4: Find pangu.app and delete it.
Step 5: Reboot.

Personally i would just shove it in a folder, or use one of those tweaks that can hide the app icon from the springboard

Well with the 1.0.1 installer, you had to perform the update to 1.1 with the Pangu app. That update wasn't on Cydia. But does seem all future updates will be available, so shouldn't be issue.
