I didn't do a massive amount while my phone was jailbroken (for the best part of 2 days), but what I did do was change the carrier name. Since I restored my phone using iTunes, the carrier name has not changed and remains what I set it when I jailbroke.

I re-jailbroke, downloaded FakeCarrier, and pressed reset, but nothing happened.

Does anyone have any suggestions on how to change this all back to normal? thank you.

Anything made on the status bar gets carried forward.

You need to restore as new now. What you can do next is install all the apps you want, and backup through iTunes. Remember the date this is done so that the next time you wanna unjailbreak you can restore from this point in time.
