About a month ago I switched from AT&T to T-mobile. I went through the AT&T unlock process and today AT&T finally unlocked my phone so I can now use on my new carrier. However to complete the unlock process AT&T says I must restore my iPhone through iTunes. The problem is that Apple as released iOS 8.4.1 which killed TaiG jailbreak, and, as far as I know, yesterday Apple also stopped signing iOS 8.4. My question is basically is there anyway I can restore my iPhone using iTunes and not be forced into updating to 8.4.1, or if i have to go to 8.4.1 is there any way to get back down to 8.4 so after my phone is unlocked I can "downgrade" and rejailbreak my iPhone. Again my iPhone 6 is currently jailbroken on iOS 8.4.

You can try Cydia Impactor, but there really is no need to restore. Find a non AT&T SIM you can test with and insert it and see what happens.

Like said above you don't need to restore.
Just connect to wifi and stick the new sim in and it will activate.
That's all.
