I just got an unlocked iPhone 3G on 4.1. I updated my iPad to 4.2.1. I was just wondering if I can sync the iPhone without it updating it?

Yes, when itunes pops up a message asking you if you would like to update to the latest firmware version 4.2.1 just click no and check the box that says "dont ask me again"
