After a reformat there are Mac updates to download, including security updates. There are some router settings I need to mess around with, but was wondering if it was ok to do that without having the updates installed. I do plan to install them, but what security issues are there when being on the internet and not having these security updates installed?

The security issues are low as long as you use common sense while you wait on your security updates. Unlike Windows that has viruses that can infect the machine simply by being connected to the Internet, there are no threats for the Mac that can do that. You would need to download and enter your user credentials for anything to hurt your Mac. The security updates also don't stop you from becoming a phishing victim so just use common sense and caution.
