I don't know if this is already in a tvOS beta, but just looking at the current Apple TV app in tvOS 17.1, I notice some differences/omissions compared with the Movies and TV Shows apps.

Where in the Apple TV app is the Movies wishlist and TV Shows favorites?

Also, when I go to a purchased TV Series in the TV Shows app, there is a Seasons button which then shows a list of the seasons, but in the Apple TV app, all the episodes from every season are shown, you can't first go to Season 3 then list those episodes. Sorry I may not be explaining this properly, I can provide some screenshots if necessary.
 
With tv shows if you search for the show to go to its store listing rather than selecting from the library, open then scroll down you should then be able to have season selection.
That’s how’s the tv app has worked previously so should also be the same on tvOS 17.2

Since the Apple TV "Movies" and "TV Shows" apps no longer work, how do you remove them from the Home Screen? I don't have the typical option to Delete. Just Edit/Move to folder.

You can’t, we’ve got to wait for when Apple removes them with a future update.

Weren’t there dedicated apps for “Movies” and “TV”? Since upgrading to iOS 17.2 on my iPhone 13 I no longer see a “Movies” app - it’s not in the app library either. I could’ve sworn it was there a couple months ago.

Not on iPhone no, just the iTunes Store app with Movies and TV Shows tabs.

You cannot remove them... but I put them in a folder with other apps (like Photos, Podcasts, Music and Arcade), and moved it to the bottom of the Home Screen.
