If I am jailbroken on i4 4.0.1 can I update straight to 4.1 or should I restore to 4.0.1?

You can update straight to 4.1

Depends on what your end goal is. If you want to return to stock firmware with no JB, go ahead and update. If you want to keep your JB, stay away from 4.1 until you hear otherwise from the Dev Team.
